1. Brown ground beef in shortening, add onion, pepper and mushrooms. 2. Cook until tender. 3. Add seasonings.. 4. In a separate pot, combine tomato soup, tomato paste, water and worchester sauce and mix by hand. 5. Grease an oblong dish. 6. Cook noodles in boiling water (salted). 7. Place 1/2 of noodles on bottom of oblong dish, then add a layer of meat. Cover with sauce; then, add 1/2 of shredded cheese. 8. Repeat with second layer, then bake at 350 degrees for about an hour. |

Zucchini Rice Pie

- large onion, finely chopped |
1. Precut onion, mushrooms and zucchini. Crush oregano and basil. Cook rice by itself until done. 2. In saucepan, cook onion, mushrooms, zuccnini, basil, and oregano in butter until vegetables are tender but not brown. 3. Stir in rice, eggs, milk, and 2 Tbsps. of the cheese. 4. Stir into well-greased 9 inch pie dish.. 5. Sprinkle with the remaining Parmesan cheese. 6. Bake, uncovered, in 350 degrees F for 25 to 30 minutes or until set. 7. Let stand 10 minutes, then garnish with a halved cherry tomato and parsley, if desired. Serves 6. |
